White asparagus grows without light in heaped soil and must remain completely covered with soil until harvest. Cultivation is very labor-intensive. June 24th marks St. John's Day, and thus the end of the asparagus season in Germany. It is sweet and mild. Peel asparagus just below the head, thinning toward the cut end. The asparagus spears are cooked in salted water over medium heat for 8-10 minutes.
